I think you have to think carfully about the pros and cons of part-time work. Part-time sounds great if it gives you time to write, but let's be realistic; you are not marketing or using your writing in any practical way right now, and unless you're on the point of publishing your trilogy and I missed it, you won't be in the foreseeable future.
You're a 30-year-old woman who lives with her mum. Eventually, your mum is going to ask you to get a proper job and leave. In the meantime, you can't get the dog you want, seemingly because your mum doesn't think you will take financial or practical responsibility for it. Is she right?
What do you actually want? If you're going to be a professional writer, in whatever field, you can't just do it when the Muse strikes. You have to be able to do it to pay the bills, and if you can't do that then you have to support yourself with other work. I've done data entry, and I could barely support myself doing it full-time.
I think you have talent. I'd like to read your trilogy someday soon in shiny, shiny paperback. I'll even design the jackets... but you have to finish it and market it first, and you've gotta make rent in the meantime.
